Ingredients

2 ripe persimmons, pureed
1 tsp baking soda
2 C. all-purpose flour
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. salt
1 egg
1 cup white sugar
1/2 C. butter
1 cup raisins (optional)
1 cup chopped walnuts (optional)
Tips
Nutritional facts do not include added chips, nuts or raisins.
Directions
1.Preheat oven to 350* F
2. Dissolve baking powder in persimmon puree and set aside.
3. Sift flour, spices, and salt together and set aside
4. Cream together butter and sugar until fluffy, beat in egg and persimmon puree. Stir in dry ingredients.
5. Add your choice of filler... nuts, raisins, butterscotch or chocolate chips... etc.
6. Drop by teaspoonfuls onto greased cookie sheet. Bake for 15 minutes.
Serving Size: makes 18 cookies
