    1/2 Cup Original Egg Beaters
    2 Cup Freash Spinach, Cooked and excess water strained
    2 Oz. Fresh Mushrooms (Sauted with Pam Olive Spray)
    1/4 Cup of Feta Cheese

    Tip: I used a Microwave Omelet Pan that I purchased at my local Shaw's SuperMarket for $2.99.


I cooked the fresh spinach in a pan until welted, drain and squeezed excess water out with papertowl.

Sprayed pan with Pam Olive Oil cooking spray until mushrooms were soft.

Because I used the Microwave Omelet Pan I followed the manufactures directions which is 2 eggs ( I used 1/2 cup EggBeaters) and mix it with 2 tablesppons of water and mix. Pour into each side of omelet pan and cook for 30 seconds (100% Power), then stir from outside to inside and put on for another 40 seconds. Then add your fillings and microwave for 1 1/2 minutes, fold and slip onto plate.

Please season as you see fit and enjoy!!
