Ingredients

    6 C. blackeyed peas...cooked
    1 Lg red onion...chopped
    8 oz fetta cheese...crumbled
    6 Tbs balsamic vinegar
    2 Tbs dijon mustard
    3.5 oz sun dried tomatoes

Tips

I tried sun dried tomatoes with zesty peppers, adds a little heat.


Directions

use directions on bag of blackeyed peas, let cool overnight in fridge. Mix all ingredients and chill before serving.
