Ingredients

    1 tsp EVOO
    1 4oz tilapia filet
    Blackening Spice
    3 cups baby spinach
    1/2 cup water
    1/3 cup uncooked couscous

Directions

Heat oil in a nonstick skillet. While the oil is heating, sprinkle a generous amount of blackening spice on the tilapia. When the oil is really hot, sear the tilapia on each side for about 2.5 minutes on each side. When you flip the fish put the spinach down in the pan and saute until spinach is wilted. Add the water and couscous, remove from the heat and cover. Let it sit for 5 minutes. Salt and pepper, to taste and eat it.
