    1 lb bulk pork [or turkey] sausage, any flavor
    1 med onion , finely chopped
    1 box [10 oz] frozen spinach, defrosted
    6 large eggs, beaten
    2 cups low fat cottage cheese
    2 cups shredded [8 oz] reduced fat cheddar or blend cheese
    0.5 cup shredded Parmesan/Romano cheese
    Salt/pepper seasoning to taste


Pre-heat oven to 375 degrees
Spray an 11" X 7" baking pan with cooking spray
Brown sausage and diced onions in a skillet til no pink remains
Add spinach to skillet and stir to incorporate
THOROUGHLY drain off all liquid and grease
In prepared baking pan, beat together the eggs, cottage cheese, shredded cheese, and grated cheese
Fold browned and drained sausage/spinach/onion skillet mixture into eggs/cheeses mixture well.
Bake, uncovered in 375 degree oven for 45-50 minutes til top is browned and knife inserted in center comes out clean.
Cover top with foil for last 10-15 minutes if needed to prevent over-browning.
Cut into 6 squares

Serving Size: 6 - squares approx 3 1/2 inches ea.
