Introduction

From Amanda: After making alanaspantry.com AMAZING Cinnamon Bun Muffins, the thought occurred to me that maybe I could combine some of that recipe (the muffins were sooo light and fluffy) with Alana's bread 2.0 recipe. This basically involved subbing in some coconut flour for a little of the almond flour, adding a little oil, and cutting back on the arrowroot powder.

The result was fantastic!! The bread turned out to be about as light and fluffy as "normal" bread, and it also very moist. I know that bread texture is all about personal preference, so I thought I would share this hybrid recipe in case anyone else is looking for a more traditional bread. (I personally prefer a more dense bread - but I'll do anything to get my man to kick that wheat habit :)

Ingredients

    Bob's Red Mill Coconut Flour, 2 tbsp
    Bob's Red Mill Almond Meal/Flour (1/4 cup is 28g), 1 cup
    Flax Seed Meal (ground flax), 4 tbsp
    Celtic Sea Salt (serv 1/4 tsp = 1.3g), .5 tsp
    Baking Soda, .5 tsp
    Spectrum Organic Coconut Oil, refined, 4 tbsp
    Coconut Nectar, Raw, Coconut Secret, 2 tbsp
    Egg, fresh, 4 large

Tips

From Krisy: When the loaf is cooled, I write down it's weight, then when I cut off a piece to eat, I weigh it so I can calculate the serving amount: total weight / weight of serving / 10 = the number you enter in Sparkpeople food log for serving size.


Directions

Preheat oven to 325

Baked in a smaller loaf pan, an Anchor Hocking Bake-N-Store 5 cup, and it made a loaf 2.25" tall. It was pretty brown on the outside but gooey in the middle after 30 minutes, so I wrapped foil around the dish and baked it for maybe 10 minutes more - it was dark, but perfect inside. The flavor is lightly sweet and so delicious... my favorite so far just for nibbling on. Warm and spread with a bit of unrefined coconut oil, it is a real treat!
