Ingredients

- 1 cup long grain white rice
- 2 cup chicken broth
- 1/4 cup lemon juice
- 1/2 cup finely chopped onions
- 2 tsp chopped parsley
- 2 tsp margarine (i used becel light)
Tips
*** If you're not a fan of tangy lemon flavor just reduce the 1/4 cup to your taste.
Directions
- In a large saucepan (that has a lid for later), saute the onions until tender in the 2 tsp of margarine
- Add chicken broth, rice, and lemon juice and bring to a boil
- Reduce, simmer and cook covered stirring often until rice is tender, approx 15-20 mins
- Once rice is cooked, mix in parsley and fluff with a fork
