1 Large Egg
0.5c Egg Whites
0.75c Spinach (more or less as desired)
2tbsp Light Ricotta Cheese
2tsp Vegetable Oil
When pouring the egg mixture over the vegetables, be sure to do so SLOWLY. If you do it too quickly you will end up pushing the vegetables away and having them all on one side of the omelet.
Don't worry if it looks messy, it will still taste delicious!
Coat pan with 2tsp vegetable oil. When pan is hot, add spinach (and any other veggie you choose to use). On medium-high, sauté veggies for 2 minutes, or until desired.
Slowly pour egg mixture over the veggies. Lower temperature and cover pan. Let sit until the top of the omelet is relatively firm. Flip omelet and cook on the other side.
Slide it onto a plate and enjoy!
Serving Size: Makes one large omelet.
