Introduction

Hearty, stick to your ribs soup. Hearty, stick to your ribs soup.
Number of Servings: 6

Ingredients

    1 lb Beef stew meat or one 1 lb beef soup bone
    1 tbsp Olive Oil
    3 Carrots, chopped
    3 Celery stalks, chopped
    1 large Onion chopped
    3 Garlic cloves, minced
    1 large Potato, diced
    1 large Sweet potato, diced
    1 cup Barley
    2 1/2 to 3 quarts low sodium Beef broth, bouillon, or water. (if using water add in boullion cubes to taste)
    1 tbsp Italian Seasoning,


Tips

Although the sodium content may be high, the other nutritional values make up for it and it's not something that you would be eating on an every day basis


Directions

Brown stew beef, in olive oil. Add all other ingredients and bring to a boil. Reduce heat and simmer until beef is tender. Add more broth, bouillon, or water as needed if soup becomes to thick while it's cooking. Remove beef and cut into small pieces and return to soup.

Serving Size: Makes approximatly 6 cup and a half servings
