A new twist on steel cut oats. A new twist on steel cut oats.
Number of Servings: 8


    4 c. water
    1 c. steel cut oatmeal
    6 tbsp ground flaxseed
    1 tbsp cinnamon
    1/2 tbsp nutmeg
    1/3 c. dried fruit small cut (cranberry, blueberry, strawberry, apple, apricot, cherry...)
    1/4 c. brown sugar
    1 c. rice dream rice drink


I prefer the tartness of the cranberries but using the flaxseed with the mixed berries really adds a little flavor all by itself. This would also work with other sugars I just prefer brown sugar. I can't use regular milk and like the rice dream but again, it would work well with other milks and you would just need to change the nutritional information. This is how I changed my children from the prepackaged oatmeal!


Bring 4 c. water to boil and add oatmeal stirring continuously for 5 minutes. Reduce heat to simmer uncovered for 20 minutes stirring frequently. Add flaxseed, cinnamon, nutmeg and continue cooking for another 10 minutes stirring frequently. Remove from heat and stir in rice milk, brown sugar then fruit allowing to sit for 2-5 minutes. Serve in warm bowl and enjoy!
