The best, almost guilt-free pesto around! Yes, it really DOES take that amount of olive oil! The addition of walnuts with pine nuts cuts down on the cost. I've used all walnuts before too! Ingredients

    Basil, 2 tbsp
    Garlic, 3 cloves
    Walnuts, .25 cup, chopped
    Pine Nuts, .25 cup
    Parmesan Cheese, shredded, 7 tbsp
    Extra Virgin Olive Oil, 2.5 tbsp

Tips

Tip: the pesto will not become smooth until the oil is poured in. I freeze them in ice cube trays, pop them out, and store in the freezer in a gal. freezer bag. Depending on what you're using the pesto for whether pasta, for a chicken or fish topping, a pizza, grilled veggies or bread, add very hot water to it to make it spreadable.


Directions

In a food processor w. metal blade, puree ingredients in the order listed. Start with washed, fairly dry basil, packed medium tight in the measuring cup. Cut the garlic in large pcs. Scrape down sides of processor after each ingredient is chopped. It will look and feel fairly chunky. With machine going, add olive oil in a slow and steady stream. As soon as the pesto is fairly smooth, it's ready.
