    1 package Zatarain's Jambalaya mix (nutrition uses original) you can use original, low-sodium, cheesy, pasta, or brown rice versions, all are wonderful
    2-3 tilapia filets, approx. 8 oz


Prepare jambalaya according to package directions for fish, omitting oil. Add tilapia filets (whole and thawed) to top of rice/pasta mixture and cover with liquid.
Serve either by removing filets and using jambalaya as a side dish or by flaking filets into the jambalaya (stir with a fork). Add your favorite veggie (green beans are great with this) and enjoy!
