    Tortellini, pasta with cheese filling, 0.75 cup
    Olive Oil, 2 1tsp
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long)
    *Escarole, 48 oz
    *Tomatoes, red, ripe, raw, year round average, 1 cup, chopped or sliced
    Vegetable Broth, 1.75 cup
    Water, tap, 1 cup (8 fl oz)


1. Cook pasta as directed
2. in a saucepan, heat oil over medium head. Add celery and cook. stirring occasionally, until tender. Stir escarole, tomatoes, broth, and water. Cover and heat to boiling over high heat. Remove saucepan from heat.
3. Drain Tortellini; gently stir into broth mixture.

Serving Size: 4 Main Dishs
