Ingredients

    2 chicken breast
    1 cup light sour cream
    4 cups cooked brown rice
    3/4 cup frozen corn
    15 oz drained and rinsed black bean
    1/2 cup salsa
    1 cup low fat cheese (+0.5 cup for topping)
    4 oz green chile
    fresh cilantro for garnish

Tips

Cooking chicken ahead of time and instant brown rice makes this dish REALLY quick.


Directions

heat oven to 350. In large bowl mix all ingredients add salt and pepper to taste (adding chili powder adds to spice) Transfer to oven safe dish, top with extra cheese bake for 20-25 minutes until heated through. garnish with cilantro. Served with tortilla chips for added calories but taste yummy!
