Ingredients

    1 1/4 cup oat flour
    1 cup oatmeal
    1/2 tsp salt
    2 1/2 tsp baking powder
    4 TBL vanilla protein powder
    1 banana, mashed
    1/2 cup unsweetened applesauce
    2 TBL canola oil
    1/4 cup egg substitute
    8 drops of Stevia or 1 pkt Truvia

Tips

These muffins are moist and are best kept refrigerated or frozen.


Directions

Preheat oven to 350 degrees. Place 12 paper liners in muffin pan. Combine dry ingredients in a large bowl. Combine wet ingredients in another bowl. Add wet ingredients into dry and stir until all the dry ingredients are moistened. Divide equally into prepared muffin pan. Bake for 18 - 22 minutes.
