    3 slices bacon, chopped
    1 pound pork tenderloin
    1 teaspoon kosher salt
    1 teaspoon freshly ground black pepper
    1 pound Brussels sprouts, trimmed and quartered
    2 tablespoons water
    1/2 medium onion, chopped
    1 lemon, zested (reserve zest)


Serve with mashed potatoes or rice (not included in nutritional value).


Preheat oven to 400 degrees.

1. Cook bacon in heavy medium-size, oven-proof skillet over medium-high heat until crispy, about 5 minutes. Remove with slotted spoon to paper towel-lined plate.

2. Saute onions in bacon drippings until soft. About 5 minutes.

3. Mix salt, pepper and 1 teaspoon of the lemon zest in small bowl. Coat the pork liberally with the salt mixture; press to coat.

4. Microwave Brussels sprouts with 2 tablespoons water for 2 minutes.

5. Add pork to the bacon drippings in the skillet; sear on all sides until browned, about 7 minutes.

6. Place pork and sprouts in pan and put in oven. Cook for 15 minutes. If meat thermometer reads 155 degrees, remove meat from pan and cover with foil, otherwise leave in pan.

7. Squeeze lemon juice over Brussels sprouts and stir. Put back in oven for 10 minutes, or until pork reaches 155 degrees.

8. Mix Brussels sprouts with remaining lemon zest. Let pork rest for 5 minutes, then slice thinly for serving.
