    3 pink grapefruits
    1 cup diced cucumber
    2 Tbs finely chopped red onion
    2 Tbs chopped fresh mint
    1 Tsp sugar (or sugar replacement)
    1/2 Tsp. tobasco
    1/2 Tsp. salt
    1 1/2 lbs. of salmon filet cut in 4 pieces
    1/4 Tsp. pepper
    baby spinach, red onion slices,mint sprigs and grapefruit slices optional


squeeze 3/4 cup juice from 1 grapefruit, reserve.
Using sharp knife, cut peel and all white pith frrom remaining grapefruits. Cut segments from membranes.

In bowl, toss together grapefruit segments, cucumber, chopped onion, chopped mint, sugar, pepper sauce and 1/4 tsp. salt; reserve

Sprinkle salmon with remaining 1/4 tsp. salt and pepper. Coat large nonstick skillet with cooking spray; place over medium-high heat. Add salmon, skin side up. Cook 5 minutes. Turn salmon, reduce heat to medium. Add grapefruit juice. Cook until salmon is opaque, 7-8 minutes. Serve with salsa and, if desired, spinach and onion slices. If desired garnish with mint sprigs and grapefruit slices.

Serving Size: makes 4 servings
