Introduction

Number of Servings: 5

Ingredients

    1 head cauliflower
    3 hard-boiled eggs
    1 pickle (or pickle relish)
    1/2 onion
    3/8 cup (6 TBSP) light mayonnaise
    1 TBSP mustard
    0.5 tsp celery seed
    0.5 tsp garlic powder
    0.5 tsp paprika
    salt and pepper to taste

Tips

Add celery if desired. Salt and pepper not included in nutritional values.


Directions

Chop cauliflower into bite-size pieces. Put in a large, microwave-safe container. Fill the container part of the way with water. Cover with saran wrap. Microwave for three minutes.

Dice one pickle and half an onion. Hard boil three eggs. Remove the yolks from two of the eggs, then dice the remaining whites and yolk.

Measure and combine all ingredients.

Chill for at least an hour.
