    14.5 oz Diced Tomato
    4 oz can Diced Green Chilies
    1 1/4 c. Chicken Broth (better if home-made)
    2 Tbsp Dry Ranch dressing mix
    4 tsp Tabasco Green Chilie sauce
    1 1/4 c. Green Chilie Enchilada Sauce
    1 c. yellow sweet corn
    6 c. water
    1 Chicken Quarter


Freeze the left over broth for later use. No added sodium or preservatives. Storage is easier if you freeze it in ice cube trays.


Remove skin then boil chicken. Once cooked shred chicken. Take out 1 1/4 c. of the water used for boiling (chicken broth). Empty out remaining water.

In the same pot pour in the broth, shredded chicken and remaining ingredients. Simmer for about 15 minutes.

Serve as is or top with your favorite cheese, avocado, etc.
