Number of Servings: 4

Ingredients

    4 medium sized potatoes (pre-boiled or use left over ones) cut into large slices - skin on or off.
    1 Medium Onion chopped into medium sized pieces
    half a tsp sea salt
    half tblsp Benecol

Tips

If using with a lamb dish, sprinkle with a little rosemary to give a little zing. You can also sprinkle with Parmessan cheese for a special occasion dish. Don't forget to calculate the cheese and add the calories to your meal planner.


Directions

Place all the ingredients in a non-stick oven proof dish and place in oven for 30mins or until golden brown.
