Ingredients

    Chicken Thigh Filets, 4 oz. 112 g, 6 pieces
    Lemon Juice, 0.25 cup
    Salt & pepper
    Spectrum Organic Coconut Oil, refined, 6 tbsp
    Cornstarch, 3 tsp
    Coconut Milk Creamer, Original, So Delicious brand, 1 cup
    Baby Bella Mushrooms (Cremini,) 8 oz.
    Dry Vermouth, 1.50 oz



Directions

Squeeze lemon juice over chicken. Lightly salt & pepper. Lightly brown chicken in melted coconut oil until done in the middle. Remove and keep warm, leaving the drippings in the pan. Mix water and cornstarch, slowly add to drippings. Add cream and mushrooms and cook until the sauce thickens. Add vermouth. Spoon over chicken. I like to serve with rice or quinoa, and a side of broccoli (though these are not included in the nutritional counts.)
