Ingredients

    2 T. EXTRA VIRGIN OLIVE OIL
    1 1/2 C CHOPPED ONIONS
    6 GARLIC CLOVES, GRATED
    1C DICED CELERY
    1 C PELLED & DICED CARROTS
    1 C PEELED AND DICED PARSNIPS
    1-1/2C PEELED AND DICED SWEET POTATOES
    2 TSP GROUNG FENNEL SEED
    2 TSP DRIED OREGANO
    1/4 TSP DRIED PEPPER FLAKES
    1 SPRIG ROSEMARY
    3C DICED TOMATOES IN JUICE
    3-4 C WATER
    1 15 OZ CAN KIDNEY BEANS, DRAINED AND RINSED
    1/2 C CHOPPED FRESH PARSLEY
    GRATED PARMESAN (OPTIONAL)
    SALT (OPTIONAL)

Directions

Heat the olive oil over medium low heat, and cook the onions for 5-8 minutes, until they start to get tender. Add the celery and garlic and cooks for 5 more minutes, until celery is soft, stir occasionally. Add carrots, parsnips, cover and coos for 10 minutes, stirring frequently. Add sweet potatoes,fennel,oregano,red pepperflakes & rosemary and cook for several more minutes. Add the tomatoes and water. Stir , cover and simmer until all the vegetables are tender- about 25 minutes. Stir in the beans and parsley and heat through- about 5-10 minutes. Serve hot topped iwth grated parmeson ( optional)
