Introduction

Ingredients

    1/2 pound 93% Ground Beef
    1/2 Pound Italian Mild Sausage
    2 Yellow Peppers- Tops removed and diced
    2 Orange Peppers -Tops removed and diced
    2 Green Peppers- Tops Removed and Diced
    1/2 medium yellow onion diced
    4 tsp diced garlic
    1/2 c drained diced tomatoes w/o added salt
    1 small can sliced mushrooms, drained
    6 oz cheddar cheese, or other favorite cheese, or none at all!


Tips

Add whatever veggies you want!! Would be great with carrots, parsnips, spinach, kale, and whatever!
GREAT for saving for Taking for lunches during the week!


Directions

Turn on oven to 350F. Prepare a glass baking dish with a little coconut or olive oil.
Remove the top of each pepper, discard membranes and seeds. Dice the tops to be used later.
Brown Sausage and ground beef in a large skillet. Drain and keep on the side. Add diced pepper tops, onion, garlic, tomatoes and mushrooms and saute until peppers are crisp tender.
Add Meat mixture back into pan and heat through. Scoop equal amounts into each pepper. Bake for about 25 min, then put slices of cheese to melt.


Serving Size: Makes 6 Stuffed Peppers

    Terrible. I added carrots and celery (not to mention salt @ pepper) yet these were still boring. I should have covered the peppers before putting them in the oven, but the directions didn't say so. Result: Peppers themselves were under-cooked, Do not waste time (and money) on this recipe. - 11/5/15
