Introduction

Ingredients

2 cans black beans, drained and rinsed
1 cup of cooked brown rice (I used a Spanish style mix with no MSG)
2 avocado guts
dash of lemon or lime juice
1/2c plain ff Greek yogurt
1 wedge laughing cow (they used to make a chipotle one, but I can't find it anymore)
2 cans rotel tomatoes, drain but save liquid
1/4 chopped white onion
1/8c cilantro
3/4c cherry tomatoes (I used the orange ones to make it pretty)
Tips
You can add pepper for heat, but my usual audience doesn't care for a lot of that!
Directions
In a food processor puree the beans adding liquid from the rotel tomatoes and salt/pepper to taste. Set aside.
Puree the avocado, lime, Greek yogurt, and laughing cow. Add salt and pepper to taste. Set aside.
Chop and mix together onion, cilantro, tomatoes, and rotel. I used a few buzzes of the food processor.
In a deep clear round bowl layer the beans first, then rice, carefully the guacamole, and top with salasa.
Done! I never even missed the olives or cheese!
