Ingredients

1/2 c vegetable oil, or softened butter
1/2 c firmly packed dark brown sugar
1/2 c granulated sugar
3 Tbsp honey
2 egg whites
2 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
2 c regular or quick oats
1 c flour
1 c Post Grape-nuts cereal
1/2 c craisins or raisins
1 Tbsp cinnamon
Tips
This recipe is derived from a Post recipe, but the cookies as they make them are a bit Unsweet, and may not satisfy your sweet tooth; so i add craisins or raisins and offset the sugars with some cinnamon, too.
Directions
Preheat oven to 350 F
Beat oil or butter and sugars in large bowl until smooth.
Add honey, egg whites or eggs and vanilla; mix well.
Add baking soda, salt, rolled oats, cinnamon, craisins, flour and Grape-nuts.
Combine until just mixed.
Drop rounded Tablespoonfuls of dough onto lined or greased cookie sheets, 2 inches apart. Bake for 10-14 minutes until golden brown.
Be careful not to overcook them, they're nice and crispy at the edges even when you don't.
Cool 2-3 minutes before removing them from baking sheet.
Cool completely on racks.
Store in airtight containers at room temperature.
