non-aerosol cooking spray
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp dried dill weed
1/2 tsp dried thyme
1/2 tsp salt
1/2 tsp black pepper
4 (4-oz) catfish fillets
1 (10-oz) can diced tomatoes with green chili peppers, partially drained
LC: Steamed green beans and Cauli-Rice (process cauliflower in a blender or food
processor till it resembles grains of rice; steam “rice” till tender; drain; salt and pepper to taste and fluff with a fork).
Regular: Serve with brown rice instead of Cauli-Rice.
Kosher: No changes necessary.
Gluten Free: Make sure tomatoes are gluten free.

Arrange catfish fillets in prepared baking dish and sprinkle evenly with spice mixture; bake for 30 minutes then top fish with partially drained diced tomatoes; bake for 10 minutes longer or until fish flakes easily when tested with a fork.
