    1 roaster chicken (approximately 2 - 3 lbs)
    2 - 3 cups of chicken stock (from cooking the roaster)
    1 cup of baby carrots cut in larger pieces
    1 can of mushrooms (approx 1 cup)
    1 cup of White or Brown rice
    Salt and pepper to taste


***Note: You can add seasonings of your choice (garlic, rosemary, sage, etc) to the roaster while cooking to change the taste with little to no change to the calories.


Cover 1 roaster chicken with water, salt and pepper to taste and boil until done. Let cool, remove the bones and shread. In a stock pot add approximately 2 cups of the shredded chicken and 2 - 3 cups of stock the chicken was boiled in and cook until boiling. Reduce to medium low, add in the mushroom with juice and carrots. Cook until the carrots are tender (approximately 20 minutes) and add the rice. Cook about another 20 minutes or until the rice is tender and serve.
