    6-7.5 c flour
    1 tsp. salt
    3 tbsp oil (i used olive oil - it was all i had)
    2 tsp dry active yeast
    2.5 c. milk, slightly warmed
    1 c. water, slightly warmed

    7 c. water
    1 tbsp. salt
    4 tbsp. baking soda


1. In a small container mix yeast with warmed milk; let rest for 10 minutes.
2. In a large bowl whisk together 6 c. flour and salt
3. Add oil and warmed water to yeast mixture
4. Add to flour/salt mixture; knead in the bowl until dough is almost smooth, adding flour as necessary (dough should be somewhat stiff and easy to handle)
5. Cover with a dish towel and place in a warm spot to rise for 1 hour.
6. Punch down dough and knead in bowl for 1 minute.
7. Cut dough into 15 pieces (I kneaded it out onto a lightly floured baking sheet prior to cutting to make it easier)
8. Form balls by pulling dough underneath. Place on a well greased surface and let balls rise for 15 minutes.
9. While balls are rising, preheat oven to 400 degrees and prepare bath:
In a large bath bring water, salt and baking soda to a rolling boil.
10. Plunge three dough balls into water and let them poach for 1 minute per side.
11. Using a slotted spoon, transfer balls to a well greased baking sheet.
12. With a serrated knife, cut 2-3 lines across each roll and sprinkle with course sea salt.
13. Bake 20-25 minutes, or until pretzels are a rich brown.
