Introduction

I buy packets of Indian spices, they are in a paste of tomato base. I sauté the chopped veg until soft and then add paste and some water. I buy packets of Indian spices, they are in a paste of tomato base. I sauté the chopped veg until soft and then add paste and some water.

Ingredients

    Sweet potato, 2 cup, cubes
    *Potato, raw, 3 cup diced
    Onions, raw, 2 cup, chopped
    Chickpeas (garbanzo beans), 2 cup
    Olive Oil, .25 cup
    Tomato Paste, 0.25 cup
    Peas, frozen, 0.5 cup

Tips

This is very filling and satisfying, good for when you want to cut down on meat meals.


Directions

Peel and dice vegetables. Sauté in olive oil until soft. Stir in Indian spice paste until mixed add water as needed to make sauce. While hot and simmering add frozen green peas until just warm.

Serve over basmati rice with plain yogurt.
