    1/2 cup egg beaters
    1/8 cup shredded cheese colby or cheddar
    1/4 cup chopped mushrooms
    1.5 Tbsp onion
    !/4 cup chopped bell pepper
    1 slice pepperjack cheese


1) Finely chop onion, bell pepper and mushroom

2) Bring pot of water to a rolling boil

3) Pour egg beaters into quart size ziploc bag, add in onion bell pepper, mushrooms and cheese.

4) Put ziplocs into boiling water and boil 15 minutes.

5) Remove bags from water, cut open and remove omelette and enjoy!

    I have made this for cub scout's camp outs. We made these up ahead and kept in the cooler. Then several bags into boiling water and Presto! Breakfast! For myself, I sub for FF cheese and add black pepper. - 11/22/07

  • Was yummy & easy. I get up @ 5:30 am for work, I can make this the night before and pop in boiling water while I get ready to go. Great for my new low carb diet. - 12/18/09

  • Excellent. An easy to make meal with little mess. One thing I learned -- go for the real Ziploc bags. I used dollar-store baggie and it broke at 10 minutes (however, after I drained the water out of my omelette, it was messy but still delicious) - 7/1/09
