Ingredients

pasta, macaroni or penne, 1.2 cup (5 oz)
Mushrooms, fresh, 1.2 cup, pieces or slices
Chicken Broth, 1 cup
Snap peas, 1 cup
Boneless Skinless Chicken Breast (325g), 11.5 oz (2 breasts cut into bite sized pieces)
Flour, white, 0.125 cup (2 tbsp)
margerine healthy attitude omega 3, 1tbsp
evaporated skim milk, 1 serving (can)
cheese, Swiss low fat kraft U.S. 2 slices, 40 gram(s)
Directions
Cook pasta.
Stir fry chicken and mushrooms, season with pepper, onion and garlic powder to taste; in pan sprayed with cooking spray until well cooked. Stir in chopped snap peas for last minute or two. Remove and mix with cooked, drained pasta in a (sprayed) casserole dish.
Melt margerine, stir in flour and cook a minute or two on low to medium heat, being careful not to brown. Remove from heat.
Slowly stir in broth, whisk until well blended, return to heat and cook until thickened.
Slowly whisk in milk, blending well. Cook an additional 4-5 minutes. Pour over pasta/chicken mix, then break up cheese and lay over top.
Bake in 350' oven 15-20 minutes, broil for last minute or two until golden and bubbly.
Serving Size: makes 4 servings, high in protein, Vit C and Vit D
