Ingredients

    1 frozen pie shell (I used Marie Callendar)
    1 large bunch broccoli, chopped
    1 sweet onion, chopped small
    couple stalks scallions, chopped
    olive oil
    1 c chicken broth, low sodium / 99% fat free
    2 eggs
    1 c egg whites
    skim milk
    1 - 1.5 c gruyere cheese, shredded
    salt and pepper

Tips

I love a little *kick* to my food and added a dash of cayenne to egg mixture, as well as some red pepper flakes to the broccoli / onion saute.


Directions

Set oven to 400. Prick bottom of pie shell w fork, put in oven for 5 min. Sprinkle bottom w with about half cheese and put back in oven until just melted. Remove and set aside.

Saute onion and scallions in olive oil for 3-4 minutes. Add broccoli and chicken broth; salt and pepper (to your preference); let simmer down. Meanwhile, beat 2 eggs and the eggs whites in large bowl w fork. Add cheese and milk. Add salt, pepper if you'd like.

Let broccoli / onion mix cool for a few minutes and then add to egg mixture. Stir well and pour into prepared pie shell.

Bake on 400 until just set.
