Ingredients

1# bag spiral pasta (use half of bag)
1 large can tomato sauce
1/2 of yellow onion, thinly sliced
1 sweet bell pepper, thinly sliced or 6 small sweet peppers
3 celery stalks, thinly sliced
2 carrots, thinly sliced
1 bunch of kale, stemmed and chopped (or a bag of chopped kale) steamed
1 bag turkey meatballs (I use Trader Joe's)
Extra Virgin olive oil
seasoning- salt, pepper, dried thyme
Tips
Always wash your vegetables before cutting them. This recipe is easy to alter to your taste. Add pepper flakes for a spicy kick to the sauce.
You can prep vegetables while the pasta is cooking. This saves lots of time.
Directions
Cook pasta, as directed on the package. Drain pasta in a colander and rinse with cold water, to stop cooking process. Set pasta aside until needed.
In a large saute pan heat the olive oil on medium-low heat. Add vegetables and a sprinkle of salt. Let vegetables cook until soft, stirring occasionally, about six minutes.
Add tomato sauce, dried thyme and meatballs. Let it all simmer, covered, until meatballs are heated through. This takes about ten minutes.
Add cooked pasta to simmering sauce. Season with salt and pepper. Serve in bowls and enjoy!
