    1.5 pounds med red potatoes, cut into 1 in cubes
    7 1/2 C chopped cabbage
    8 green onions, chopped
    1 C fat free milk
    3/4 C reduced fat butter
    3/4 t salt
    1/4 t pepper


1. Place potatoes in Dutch ove, cover with water. Bring to a boil. Cover and cook over med heat for 10-15 min or until potatoes are almost tender. Add cabbage during last 5 minutes of cooking.
2. Meanwhile, in a small saucepan, combine onions and milk. Bring to a boil. Reduce heat, simmer uncovered for 5-6 min or until onions are soft.
3. Drain potato mixture, mash with milk mixture, butter, salt and pepper.

Serving Size: makes 8 3/4 C servings
