Number of Servings: 12


    1 1/4c nonfat milk
    1/3 cup maple syrup
    1/4 cup canola oil
    1 egg, lightly beaten
    2 cups All-Bran cereal (Original, not Extra Fiber)

    3/4 cup whole wheat flour
    1/2 cup all-purpose flour
    1 tbsp baking powder
    3/4 tsp ground nutmeg
    1/4 tsp salt
    1 large pear, unpeeled, shredded (about 1 cup)
    1/2 cup prunes, with orange essence (chopped)


Preheat oven to 350 and spray a 12 muffin tin pan.

Mix bran and all liquids together in a bowl and let it sit and soften the bran. Add the pear to this bowl.

It a separate bowl, mix the dry ingredients and the prunes and zest.

Finally pour the flour bowl into the liquid bowl and fold until all ingredients are moist. Bake on center rack for 22-25 minutes. Remove from oven and let cool in tin for 10 minutes before removing the muffins onto the cooling rack.

Serving Size: Makes 12 good sized muffins
