    Milk, 1%, 1 cup
    Lemon Juice, 15 mL
    Quaker Oats 1 cup
    Egg, fresh, 2
    Canola Oil, .33 cup
    Vanilla extract 1 tsp
    Water, .15 cup
    Flour, white, 1 cup
    Whole Wheat Flour, 0.5 cup
    Baking Powder, 1 tsp
    Baking Soda, 0.5 tsp
    nutmeg, 0.25 tsp
    Brown Sugar, .5 cup, packed (
    Blueberries, frozen (unsweetened), 1 cup, unthawed


add lemon juice to milk and let sit for 5 min. add rolled oats to milk and let sit 10 minutes more. Add brown sugar, eggs, oil, water and vanilla. in another bowl combine white flour, whole wheat flour, baking soda, baking powder, and nutmeg. add dry ingredients to wet and stir to just combine. Add blueberries and stir with 10 strokes. scoop into prepared muffin pan. Bake in oven at 400F for 20-25 minutes.
