    1/2 cup Pepper Jack cheese, shredded
    8 oz. fat free cream cheese, softened
    1/3 cup green onions, finely chopped (use only white and light green parts of the onions) discard the dark green stalks)
    8 fresh Jalapeņos peppers, sliced lengthwise, seeded
    3/4 cup bread crumbs, whole grain such as Panko will not need all
    1/2 tsp. salt


Mix together pepper jack cheese, cream cheese and green onions. Slice through stem to narrow end of peppers (lengthwise); remove seeds and membrane using the tip of a teaspoon in a scrapping motion. Be careful of the spraying pepper juice that will burn your eyes. Mix together bread crumbs and salt in a shallow dish. Spoon and pack the cheese mixture into each sliced jalapeņo pepper. Holding pepper in hand, turn over and press the cheese mixture into the panko bread crumbs. Place on a cooking sheet pepper side down. Spray peppers with cooking spray. Bake at 375°F for 20 minutes, turn up heat to broil and watch closely for bread crumbs to turn brown and crispy but not burned.
