    1 cup diced, peeled potatoes
    3/4 cup carrots diced
    1/2 cup diced onion
    1/2 cup butter, unsalted
    1/2 cup flour
    1.5 cups chicken broth
    3/4 cup skim milk
    2 cups chicken breast cooked and diced
    1/2 cup frozen peas
    1/2 cup frozen corn
    double refrigerated pie crust

    Place carrots and potatoes in pot with water just covering. Bring to a boil. Then turn heat down and simmer 8 -10 minutes until tender. Drain. In sauceapn melt butter and saute onion. Stir in flour until blended. Gradually stir in broth and milk. Bring to a boil and stir and cook 2 minutes or until thickened. Add chicken, peas, corn, and potatoes/carrot mix. Line 9 inch pie plate with one of pie crusts. Scoop pie mixture in. Cover with other pie crust. Pinch edges and put slits in the middle, Bake at 425 for 35-40 minutes. Cool 15 minutes before cutting.
