Introduction

Ingredients

    1 lb. Chorizo (I prefer pork), casing removed.
    2 Bell peppers (I prefer yellow).
    1 large raw onion, sliced.
    5 medium potatoes, peeled and chopped into small pieces.
    1 tsp. cumin
    1 tsp. salt
    1 packet Sazon Goya (available in the Hispanic foods section of your supermarket).

Tips

Eat with one or two tortillas and a dab of sour cream on the side.


Directions

Heat Chorizo in non-stick skillet. Use a wooden spoon to mash the chorizo so that it separates. Note: OIL NOT NEEDED since Chorizo already has quite a bit of fat.
While Chorizo is cooking, add in potato. If your other ingredients are already prepared, go ahead and add them in to save time. If not, use this time to cut and slice remaining vegetables.
Add in all remaining ingredients.
Cook until potato is tender and chorizo is fully cooked. The chorizo has a darker color once it is ready. The time depends on how small your potato pieces are.
