    Egg, fresh, 1 large
    Brown Sugar, 2/3 unpacked
    Pumpkin, canned, 1 can
    Milk, 1%, 1 cup

    Wheat flour, white, all-purpose 1.25 cup plus 1 Tbls
    Cocoa, dry powder, unsweetened, .25 cup
    Salt, .5 tsp
    Baking Powder, 1 tsp
    Baking Soda, 1 tsp

    optional - Cadbury Royal Dark, chopped, (or mini chic chips) - 50 grams

Preheat oven to 400 F.
Mix wet ingredients in a large bowl. Blend dry ingredients in a small bowl, and fold into wet. Once blended, add chopped chocolate or mini chocolate chips, if desired. Divide into lined muffin tins (may stick if cook directly in the pan, due to the low fat content.) Original recipe called for 36 mini muffins cooked for 15min, but I made 24 minis plus 2 full sized muffins. the mini muffins cooked for a full 19 minutes, and the large muffins cooked for 21 @ 400 F.
