    1 lb. Bay Scallops
    8 limes, juiced
    2 tomatoes, diced
    5 green onions, minced
    2 stalks celery, diced
    1/2 green bell pepper, minced
    1/2 cup parsley, chopped
    1/8 cup cilantro, chopped
    1 pinch black pepper
    1.5 tbsp olive oil


1) Juice limes into a bowl and let scallops sit in it for about 8 hours, or overnight, until they turn opaque.

2) Drain half of the juice, and add all of the other ingredients and mix well

3) Serve in a chilled glass with a slice of lime hanging over the rim.
