Number of Servings: 6


    6 chicken breasts, butterflied (pocket slit)
    1 bag baby spinach
    2 tablespoons shallots
    1 tablespoon butter
    6 egg yolks
    Salt and pepper, to taste
    2 tablespoons honey
    1 teaspoon Dijon mustard
    1 teaspoon vinegar
    Chili flakes, to taste


Combine spinach and shallots and sauté in butter. place on paper towel, then chop.

Stuff chicken with spinach mix then place 1 egg yolk in the center of the spinach, close chicken and stud with toothpick.

Bake in 350 degree Fahrenheit oven for about 10 minutes.

Baste with honey, Dijon mustard, vinegar and chili flakes.
