Ingredients

2 cups of uncooked pasta shells
    8oz of velveeta 2%
    3 tbsp minced garlic
1 cup (or more) of frozen veggies, defrosted (the california mix is my favorite but you can add which ever veggies you like)
4 tbsp of light sour cream
1/4 cup of 2% shredded cheddar
    1/4 cup italian bread crumbs
    * you may also need some milk for melting cheese*

Directions

Cook pasta according to package. While the pasta is cooking defrost frozen veggies in the microwave (usually takes about 2 minutes). Then melt velveeta in microwave(you may want to add a tiny bit of milk to help). Drain pasta and place in a 1-1/5 quart casserole dish. Add veggies, velveeta, garlic, and sour cream. Mix well. Then top with cheddar and then bread crumbs. Bake at 375 for about 10-15 minutes or until bubbly.

This dish is full of nutrients and very kid friendly!
