    2 Large Eggs
    1/4 of medium tomato
    1 Tbsp chopped onion
    6 spinach leaves
    1 oz shredded cheddar cheese


Dice tomato and onion, shred cheese. Beat two eggs in a bowl. Add eggs to heated saute pan. Place tomato, onion, and spinach on the cooking eggs. When egg is almost cooked add cheese. Fold omelet over so all ingredients are inside. Flip the omelet over and cook a little while longer. Enjoy.
