Ingredients

    1 bag 32 oz frozen southern style hashbrowns
    1 pkg 10 ballpark beef franks
    1/2 onion, chopped
    1/3 cup diced pimentos or roasted pepper
    1 can Campbells condensed cheddar cheese soup
    1 cup 1% milk
    1 - 2 TBS ketchup
    1 - 2 tsp deli mustard

Tips

My kids like cornbread with this supper. A green salad rounds it out nicely.


Directions

Empty bag of frozen hashbrowns into a large bowl. Add chopped onion and pimento. Salt and pepper to taste. Add hotdogs that have been cut into 3/4" pieces. Stir to combine. In a separate bowl, combine soup, milk, ketchup and mustard. Whisk to combine. Pour over potato mixture and stir well. Pour into a 5 quart crockpot and cook on low for 4 - 6 hours. OR pour into two 2-quart casserole dishes. Freeze one and bake the other at 350F for 1 hour.
