Ingredients

    1.5 tbsp extra virgin olive oil
    3 cloves garlic
    1/2 white onion
    1 stalk celery
    1 medium carrot

    1 tbsp basil
    1 tbsp thyme
    2 tsp salt
    pepper to taste

    1-28 oz can crushed tomatoes
    4 cups water
    1 veggie cube stock

Directions

Heat oil over medium low. Saute garlic, onion, celery, and carrot for 10 minutes. Add spices, tomatoes, water, veggie cube. Let simmer for about 30 minutes. Taste, season as needed.

Serving Size: Four bowlfuls :)
