    wild hog sausage, or lean sausage
    onion, chopped
    3 garlic cloves
    red/green bell pepper, chopped
    2 bulbs leeks, sliced
    Italian seasoning
    eggplant, sliced thin
    egg, beaten
    1/2 c finely chopped roasted nuts
    olive oil
    tomato sauce, 4-0z can


Brown lean sausage in olive oil in skillet. Add onions and garlic; cook till tender, slightly browned, and sausage cooked thoroughly.
Add sliced leeks and chopped peppers. Cook for about 3 minutes till soft. Add Italian seasoning to taste.

Place olive oil in casserole pan and spread half of tomato sauce with oil. Take each eggplant slice and dip into egg and then nuts and begin layering. Place half of sausage-pepper-leek mixture on top of eggplant slices. Then repeat layering. Finish up with the rest of tomato sauce and freshly grated Mozzerella and Parmesan cheese. Pour rest of tomato sauce over that.
Bake in 350-degree convection oven or regular oven.
