    2 cups HEB Real Egg egg substitute
    1/2 cup chopped onion
    2 cups mushrooms, coarsely chopped
    4 cups fresh spinach, chopped
    1 cup HEB Fat Free Shredded Mozzarella Cheese
    1 T. EVOO


Serving Size: Makes 2 servings

Saute onion and mushrooms in part of the olive oil. This can be prepared ahead of time.

Combine chopped spinach and HEB Real Egg. Preheat skillet to medium high and add olive oil. Quickly add egg and spinach mixture. As mixture cooks, tilt skillet slightly and lift cooked outer edge of eggs to lit uncooked mixture flow underneath. Continue till 95% of mixture is cooked. Top with sauteed mushrooms and onions (onto one side only) and cheese. Fold over and continue to heat through till cheese is melted. Cut in half and serve immediately.
