Number of Servings: 8

Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Carrots, raw, 1 cup, chopped
    Celery, raw, 1 cup, diced
    Garlic, 1 clove minced
    Bay Leaf, 2
    Rosemary, dried, .5 tsp
    Thyme, ground, .25 tsp
    Marjoram, dried, .5 tsp
    Celery seed, .5 tsp
    Lea & Perrins, Worcestershire Sauce, 3 tsp
    Parsley, 1 tbsp
    Beef stock, 8 Cups (I used Wolfgang Puck's Organic Beef Stock)
    Barley, pearled, cooked, 2 cup
    1 Cup diced cooked beef

Directions

Saute vegetables
Add spices and stock
Simmer 15 minutes
Add barley and diced beef
Simmer 15 minutes
Add Worcestershire and parsley to serve

  • This soup was easy and quite tasty, my kids had never tried barley before, and they all liked it. I think I would put more Worcestesire sauce, but it was great. Very easy, too. - 10/12/14
