    Pasta, cooked, 16 oz
    Egg, fresh, 2 large
    Parmesan Cheese, grated, 2 tbsp
    Peas, frozen, 1 cup
    Cured Ham, 5 oz
    Onions, raw, 1 medium (2-1/2" dia)
    Olive Oil, 1 tbsp


I was taught this recipe by a few Italians, it was what they ate in university. They used bacon or pancetta but I like country cured ham too.


Cook fetuccini in water as directed. In large bowl, whisk together eggs, olive oil and cheese. Sauté onions and chopped cured ham, while hot smother with frozen peas, put on lid, take off heat. Drain pasta and quickly toss in eggs. If you are scared of raw eggs or afraid your pasta wasn't hot enough to cook eggs, just put back into hot pan and stir until dry. Toss ham, peas and onions into pasta and serve.
